4 Chinese eggplants
2 raw eggs
1 teaspoon salt
6 tablespoons cooking oil

  1. Grill the eggplants

    For a smoky flavor, grill the eggplants until the color of the skin turns almost black. Let the eggplants cool for a while then peel off the skin. Set aside.
  2. Prepare the egg mixture

    Crack the eggs and place them in a bowl, add salt and beat.
  3. Coat the eggplants

    Place the eggplants on a flat surface and flatten them using a fork, then dip them in the egg mixture.
  4. Fry the eggplant omelet

  5. Serve
