These nuggets are both crispy and flavorful, making them a hit with children. Perfect for Iftar or as a healthy snack, they provide a good balance of vitamins, fiber, and energy. Veggie Nuggets

3 carrots, peeled and cut into chunks
½ head cauliflower, broken up
1 head broccoli, broken up
2 cloves garlic, largely chopped
1 egg
½ tsp onion powder
1 tsp salt
½ tsp pepper
1 ¾ cups breadcrumbs (205 grams)

  1. Blend the Vegetables

    Blend the carrots, cauliflower, broccoli, and garlic with an egg, salt, pepper, and onion powder in a food processor until you get a dough-like texture. Add the 1 ¼ cup of the breadcrumbs and blend again until combined well.
  2. Shape the Nuggets

    Scoop 1 tablespoon of the mixture and shape into nugget-like pieces. Coat each piece in the remaining breadcrumbs.
  3. Pan-Fry the Nuggets

    In a hot non-stick pan drizzled with oil, fry your nuggets for 5 minutes on each side until golden brown.
  4. You can bake the nuggets in a preheated oven at 200 degrees Celsius. Place on a parchment-covered cookie sheet and bake for 10 minutes on the first side, flip, and bake for another 15 minutes.
