Sweet Potato Muffins

2 large sweet potatoes
¾ cup almond milk
2 eggs
½ cup agave syrup
1 tsp vanilla extract
1 tbsp coconut oil
2 cups whole wheat flour
¼ tsp salt
1 tsp cinnamon
1 tsp baking soda

  1. Bake the Sweet Potatoes

    Preheat your oven to 200 degrees Celsius. Wash your potatoes and poke them with a fork on all sides. Wrap them in aluminum foil and bake for 50 minutes. Once done, remove them and let them fully cool.
  2. Make the Batter

    Peel the baked sweet potatoes, and toss them in a blender with milk, eggs, agave syrup, and coconut oil. Mix until smooth, then transfer to a mixing bowl. Add dry ingredients including flour, salt, cinnamon, and baking soda. Mix until smooth.
  3. Prepare to Bake

    Pour the mixture into a muffin tin, then bake at 180 degrees Celsius for 20 minutes. Top with syrup or sugar glaze and enjoy.
