The pomelo is paired with crunchy vegetables like cucumber, carrots, and red bell peppers for texture, and fresh herbs like cilantro or mint for added fragrance. You can also add roasted peanuts or cashews for some crunch. Dress the salad with a mixture of lime juice and a little sugar for a sweet and sour balance, making it a perfect, hydrating dish for Iftar.

Salad

1 iceberg lettuce
1 cup fresh white mushrooms
1 cup corn
1 cup Halloumi cheese
1 pomelo
½ cup pomegranate seeds

Dressing

1 cup plain yogurt
2 tbsp mayonnaise
1 tbsp mustard
½ lemon, juiced
1 tsp white vinegar
Salt and pepper to taste

  1. Prepare the Salad

    Cut your iceberg lettuce into size-bite pieces, same with the mushrooms, Halloumi cheese and pomelo. Place in a salad bowl with corn and pomegranate seeds.
  2. Make the Dressing

    Mix yogurt, mayonnaise, mustard, lemon juice, white vinegar, salt, and pepper. Then drizzle over the vegetables, toss, and enjoy.
