  • Ingredients of Bulgur and Halloumi Salad

Salad

½ cup bulgur
½ cup boiling water
1 cucumber
1 tomato
½ cup parsley
½ cup chickpeas
½ red onion
200 grams halloumi cheese
1 tbsp honey
¼ tsp chili flakes
¼ cup pomegranate seeds
¼ cup walnuts

Dressing

2 tbsp olive oil
1 lemon, juiced
2 tbsp pomegranate molasses
1 tsp dried mint
1 tsp sumac
½ tsp toasted sesame
Salt to taste
  • Method & Directions of Bulgur and Halloumi Salad

    • 10 Minutes
  1. Soak the Bulgur

    In a bowl, soak the bulgur in boiling water for at least 10 minutes
  2. Grill the Halloumi

    Slice the halloumi cheese and mix with honey and chili flakes, then grill in a hot pan with a drizzle of olive oil until golden on both sides.
  3. Make the Dressing

    Mix the olive oil, lemon juice, pomegranate molasses, dried mint, and sumac together.
  4. Prepare the Salad

    Transfer your soaked bulgur into a large salad bowl, and toss with the finely chopped cucumber, tomato, and onion. Mix in the parsley and chickpeas then add the dressing and adjust the salt to taste. Then, top with grilled halloumi cheese, pomegranate seeds and walnuts.
