Beef Wellington

500 grams thick beef tenderloin
Salt and black pepper
2 tbsp extra virgin olive oil
2 tbsp yellow mustard
500 grams mushrooms
4 thin beef or turkey bacon
1 sheet puff pastry, thawed
2 large egg yolks, beaten
Flaky salt, for garnish

  1. Preheat the Oven

    Before getting started, preheat your oven to 200 degrees Celsius.
  2. Pan-Fry the Beef

    Season the beef with salt and pepper. Add 2 tablespoons of oil to a large hot nonstick pan and cook the meat on each side until browned. This will take 2 - 3 minutes for each side: bottom, top, and sides. Set the beef aside and let it cool, then brush mustard on all its sides.
  3. Cook the Mushrooms

    Finely chop your mushrooms in a food processor and cook on medium heat for 10 to 15 minutes. Make sure they release all their moisture to get this recipe right. Then, set them aside.
  4. Assemble Beef, Mushroom, and Bacon

    Lay the bacon slices on a large plastic wrap, ensuring they overlap enough to cover the beef. Spread the mushroom paste, then place the meat on top. Roll tightly—the plastic wrap will make this easy—and refrigerate for 20 minutes.
  5. Roll the Puff Pastry

    Roll your puff pastry on a lightly floured surface. Unwrap the beef and place it in the middle of the dough. Brush the edges with the beaten egg yolks and start folding. Cut off any excess dough and seal tightly.
  6. Prepare to Bake

    On a baking sheet layered with a piece of parchment paper, set the Beef Wellington, use the rest of the egg wash and spring flakey salts. Then, score the pastry with a sharp knife.
  7. Bake

    Bake at 200 degrees Celsius for 25 to 25 minutes until the pastry is nicely golden. Once done, cut it up and serve with a side dish of your choice.
