Lamb Chops & Veggies

2 kilos of lamb chops
8 medium potatoes
4 sweet potatoes
4 large carrots
3 corns
10 mushrooms
10 cherry tomatoes
8 green beans
1 head of garlic
1 cup of water

Marinade

½ cup soft butter
2 tbsp oregano
2 tbsp Dijon mustard
1 large lemon, juiced
⅓ cup olive oil
5 cloves of garlic, minced
1 cup room temperature water
Salt and pepper
  • Method & Directions of Baked Lamb Chops & Veggies

  1. Make the Marinade

    Mix butter, oregano, Dijon mustard, lemon juice, olive oil, crushed garlic, salt, pepper, and water in a large bowl. Throw in the lamb chops in a separate bowl and season with a hefty amount of salt and pepper.
  2. Prepare the Baking Sheet

    Get a large baking sheet, layer with parchment paper, and generously butter the parchment paper. Dip your lamb chops in the marinade and arrange them on your baking sheet.
  3. Add the Vegetables

    Now, arrange the chopped potatoes, carrots, and corn on the cob along with the whole cherry tomatoes, mushrooms, green beans, and garlic head around and between the meat. It's going to be crowded, and that's what you want. Once done, pour in the rest of the marinade over the vegetables and meat.
  4. Get Ready to Bake

    Add an extra hefty drizzle of olive oil over the ingredients along with 1 cup of water. Cover the baking sheet with another piece of parchment paper followed by a piece of aluminum foil. Bake at 200 degrees for 40 minutes.
